Nala loved her treats, and my gluten-free Easter mini cupcakes were a favourite on our outings. Put some extra in the bag for yourself too.

They are easy to make, filled with beneficial nutrients, and provide some extra energy for both of you. Nutritional value in the ingredients:

  • Egg – protein, omega 3 DHA og ALA, Vit A, E, B12, B9/folate, B2/riboflavin, iron, selenium, zink, iodine.  Protein is a vital nutrient that contributes to healthy skin and fur, muscle development and tissue repair, just to name a few benefits.
  • Coconut oil -lauric acid and Vit E; may have an anti inflammatory effect which can be beneficial for skin, fur and joints.
  • Apple – Vit C, A, antioxidants, potassium og fiber. Fiber is important for gut health. Gives the cup cakes natural sweetness.
  • Oatmeal – a gluten free grain rich in protein, iron, zink, magnesium, folic acid, potassium and Vit B1 and B6 – oats provide energy and they are rich in fiber and beta glucans which is good for the gut microbiome. Oats can also have a stabilizing effect on blood sugar levels.
  • Linseed flour–  contains fiber, phytochemicals, protein and ALA omega 3. Beneficial for the gut and the joints.
  • Collagen powder – collagen is a type of protein important for the bones, joints, skin and blood cells.
  • Chia seeds – rich in ALA omega 3, fiber, manganese, phosphorus, copper, selenium, iron, magnesium and calcium. They also contain quercetin, which can be beneficial for allergic dogs.
  • Turmeric – safe for dogs in small doses. Contains a phytochemical called curcumin which may help with joint inflammation and muscle soreness. Curcumin in larger doses has a blood thinning effect.
  • DHA omega 3 =  Docosahexaenoic acid is mainly found in marine algae and fatty fish (the content of omega 3 in eggs is dependent on what kind of food laying hens are eating. Feeding them flax seeds or chia seeds increases the levels of omega 3 fatty acids in the eggs. DHA content in fish is dependent on how much marine algae they eat).
  • ALA omega 3 = Alpha-linolenic acid, omega 3 from plant oils.

Ingredients

  • 2 free range organic eggs 
  • ½ cup coconut oil – melted
  • 1 apple, grated (remove peel and seeds)
  • 1 cup oatmeal
  • 2 tbsp linseed meal
  • 1 tbsp collagen powder (optional)
  • 1 tbsp chia seeds
  • 1 tsp turmeric
  • 1 tsp baking powder

Method

  • Mix egg and coconut oil in a large bowl
  • Stir in grated apple
  • Mix together oat flour, linseed flour, collagen powder, chia seeds, turmeric and baking powder in a small bowl
  • Stir the dry ingredients into the egg/oil mixture
  • Fill the muffin tins ⅔ full
  • Preheat the oven to 200C Bake for about 15 minutes
  • Cool on a rack.

If there are any mini cupcakes left, they can be stored in a box with a lid in the fridge for a week.
